Iaas (Infrastructure as a Service)

IaaS refers to Computing hardware resources that are located at remote locations and can accessed over the  Internet typicality using a browser form any computer/ laptop connected to the internet.  Resources include Computing Resources, Storage, Networking Resources like Firewall etc. The term service is used because one pays for these resources typically on an hourly or monthly or yearly basis. You don’t own the hardware, you pay for use of the resources based on actual usage.

PaaS (Platform as a Service)

PaaS refers to resources like Operating Systems, Software running Virtual machines, software to configure
network and security setup, a a whole lot of other software to support Applications to run on the cloud
setup.

SaaS (Software as a Service)

These are typically third party software that is available over the internet as a paid services. Even if you are not aware of these technologies, you are already using many such service. If you are using mail it is a SaaS application.
